INGREDIENTS :

For Souvlaki Marinade

  • 10 garlic cloves, peeled
  • 2 tbsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp sweet paprika
  • 1 tsp each Kosher salt and black pepper
  • ¼ cup Private Reserve Greek extra virgin olive oil
  • ¼ cup dry white wine
  • Juice of 1 lemon
  • 2 bay leaves

For Chicken

  • 2 ½ lab organic boneless skinless chicken breast, fat removed, cut into 1 ½ inch pieces

Pita Fixings

  • Greek pita bread
  • Tzatziki Sauce (make according to this recipe)
  • Sliced tomato, cucumber, onions, and Kalamata olives

INSTRUCTIONS :

Get the marinade ready to use. A small food processor should be used to combine the following ingredients: garlic, oregano, rosemary, paprika, salt, pepper, olive oil, white wine, and lemon juice. However, the dried bay leaves should not be added at this time. Pulse until everything is thoroughly blended.

In a large bowl, place the chicken, and then add the bay leaves. Apply the marinade on top. To ensure that the chicken is entirely covered in the marinade, toss the ingredients together. Cover securely and place in the refrigerator for two hours or overnight (for a marinating alternative that is more expedient, see the note).

Soak ten to twelve wooden skewers in water for approximately thirty to forty-five minutes. You should get the Tzatziki sauce and any other toppings ready, and if you are going to add Greek salad or any other sides, you should also get those ready. There are some sides that may take longer to prepare, such as roasted garlic hummus; however, you can prepare those in advance.

When you are ready, thread pieces of chicken that have been marinated through the skewers that have been made.
The outdoor grill (or griddle) should be prepared. Heat the grates over medium-high heat after brushing them with a small amount of oil.

 

I.e. You should place chicken skewers on the grill (or cook them in batches on the griddle) until they are well browned and the instant read thermometer registers an internal temperature of 160 degrees Fahrenheit (it will continue to cook to 165 degrees Fahrenheit as it rests).

 

If you want the skewers to cook equally on all sides, you should turn them over every five minutes. The temperature of the grill should be adjusted if necessary.

While the food is being grilled, give it a little coating of the marinade, and then throw away any leftover marinade.
The chicken should be placed on a serving tray and let to rest for three minutes. Pitas should be grilled for a short period of time and kept warm.

Put together pitas filled with grilled chicken souvlaki. In the beginning, apply Tzatziki sauce on pita, then add chicken pieces (of course, remove them from the skewers first), and last, add vegetables and olives over the chicken.

Adding Greek salad, watermelon salad, roasted garlic hummus, or a large mezze platter to your buffet is an option if you want to increase the number of products you have available for guests to choose from.

 

NOTES :

Notes on the recipe: 1) If you do not have the time to thoroughly marinade the chicken, you may simply do so for thirty minutes before cooking it

You need only cover it and let it sit at room temperature. 2) Grilled souvlaki can be stored perfectly in the refrigerator for approximately three days. Before placing the chicken in the refrigerator, make sure that it has been removed off the skewers and placed in a container that has a secure lid.
