Ingredients
Greek Style Chicken Skewers
- 1 1/2 pounds chicken breast
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/4 teaspoons black pepper, freshly ground
- 4 cloves garlic, roughly chopped
- 4 sprigs rosemary
- 1/4 cup olive oil
- 2 tablespoons lemon juice, plus zest of one lemon
Hummus–
- 2 cups chickpeas, canned, drained and rinsed (garbanzo beans)
- 1/3 cup tahini, roasted sesame paste
- 1/4 cup lemon juice, plus zest of one lemon
- 2 cloves garlic, crushed
- 1/2 teaspoon kosher salt
- 1/4 cups olive oil
- 1/4 cup water, gradually added as needed
Instructions
Greek Style Chicken Skewers
Before cooking, soak wooden skewers in water for at least fifteen minutes.
Cut each chicken breast into strips that are ½ inch thick. I like to cut them against the grain to get a longer piece. Four to five pieces per breast should be within your grasp.
Combine the cumin, paprika, salt, pepper, garlic, rosemary, olive oil, and two tablespoons of lemon juice in a resealable plastic bag and marinate the chicken breast. Toss to blend, then coat. Give the chicken at least twenty minutes to marinade. Once the skewers are ready to cook, add the chicken.
Grill over medium heat. Lightly coat a folded piece of paper towel with a little amount of vegetable oil, and then carefully apply the oil to the grill. Add the marinated chicken skewers to the grill once it’s nice and hot. Depending on the thickness of the chicken, cook it for 4–6 minutes on each side, or until it is no longer pink (160–165°F).
The chicken skewers should be placed on a foil-lined sheet tray for broiler cooking. To prevent burning, wrap foil around any exposed skewers. The chicken should be cooked for 4 to 5 minutes on each side; the closer it is to the broiler source, the more browning it will get. However, you must pay close attention to the chicken because it cooks very quickly.
